Markus Neff presides over this gourmand's paradise located in the Waldhotel Fletschhorn. The vibe is innovative, the flavors superb, many ingredients local, and dishes rotate seasonally. Among the winners: seafood and tagliatelle with local saffronor roasted Alpine lamb chops with rye-bread crust and creamy potato gratin. You can order à la carte, but to fully appreciate the chef's talents, try a tasting menu for 180 SF or 210 SF, which includes a fabulous cheese cart. Lunch, served noon–5 pm, is a great time to sample the gourmet team's talents at a more favorable price. Mains start at 25 SF, while the lunch menu, including starter, main, dessert, glass of wine, and coffee runs 90 SF. The expansive vinothek stocks some 45,000 bottles, including many local Valasian wines that match the cuisine's high style.
