For a more authentic, historical perspective on cheese making than at the Maison du Gruyère, visit this facility on the edge of Moléson-sur-Gruyères. Watch Gruyère, the true Vacherin d'Alpage, or Petit Moléson being made in a cauldron over an open fire in the low-roofed chalet, just as it has been made for centuries. A small restaurant serves traditional local dishes. Reservations advised.
