Brie stuffed with truffles, lobster "cappuccino" (a foamy bisque), and le pigeon "royal": with such showstoppers as these, award-winning chef Robert Speth scales the summits of culinary excellence. He masterfully marries exotic flavors with local ingredients, and his results have foodies and millionaires fighting for reservations; book way ahead in high season. Set in a decorator-perfect chalet (originally built by Prince Sadruddin Aga Khan), this has been a landmark ever since it opened in 1962. Save room for dessert, perhaps the signature hot chocolate cake with kumquats.
