A rambling tavern with roaring fireplaces, a giant olive press in the main room, and immense antique wine and olive oil amphorae—signed by all the illustrious guests who have visited—this is arguably the town's best-known restaurant. Madrileños swarm here for the suckling pig and the roasted lamb. For starters, try the hearty beans, the asadillo (roasted peppers), or the blood pudding. Wine tastings are held in the carved caves here, which only can be visited on weekends.
