What was once a 19th-century military fortress on the southern flank of the bay of Palma has been converted into Mallorca's latest—and arguably Europe's most unique—hotel: Cap Rocat. Obscured on a outcropping popular with bird and sea life and 25-minutes from Palma, the sprawling mostly-buried structure is surprisingly light-filled, with a décor that, courtesy of local architect Antonio Obrador, pays homage to its past (think stylized bullets for door handles and gun carriages for cocktail tables). Rooms have modern conveniences, like plasma screen TVs and Nespresso machines as well as locally sourced upholstery and textiles, including soft curtains in earth tones and specially commissioned Roba de Llengues carpets. But with a pair of restaurants, including a waterside Sea Club, perfect for candle-lit dinners; an Infinity pool created from one of the many ramparts; and the aquamarine Mediterranean, few will be will spending too much time in their quarters.

Bunker Mentality
A military fortress dating to 1898 might not be the first venue that comes to mind when one considers a waterside Mediterranean holiday. Except, of course, when that fortress is on Mallorca and happens to be the island's latest, hottest hotel opening. With just 24 suites, each decorated in pleasing earth tones and some with all-weather canopied beds on the former ramparts above, this hotel is certainly unique but not for everyone. It is, however, for solitude-seeking sybarites who wish to soak up the sun (either by the infinity pool or by the water's edge), pour themselves into a book or devour some of the market fresh food from the pair of restaurants on site.
