Five blocks from Santander's marina, this elegant dining room maintains an impressive attention to detail: order the tasting menu, for instance, and you'll be served no fewer than five varieties of olive oil to accompany a delicious assortment of breads. Only the freshest ingredients are used, and the chef makes tasty use of Santander's famed seafood. The menu may feature cod à la pil pil (a Biscayan sauce of olive oil and garlic) or suckling pig roasted with orange

and flambéed with peach. The tasting menu is expensive, but worth it for the quality of the food and the experience.
