With a boisterous bar to set the tone and decibel level, this mesón (traditional tavern-restaurant) is definitely hospitable. The owner is devoted to maintaining traditional Castilian specialties while concocting innovations of his own, changing dishes with the seasons. The large, old-style, brightly lighted dining room is often packed, and the waiters are uncommonly friendly. Although it's a bit touristy, it's also popular with locals, and the cochinillo
(suckling pig) is delicious in any company.

The food here truly is some of the best you will ever taste. The only problem is deciding whether to have the suckling pig, or the roast lamb. Both are really excellant. Really, trust me! We have many visitors from around the world, and Segovia makes for a fine day out from Madrid and a long and lazy lunch at Jose Maria is perfect. The starters are good enough (the bean soup is good, but filling - don't forget the point of being here is the main
course!). The waiting staff are friendly and make a good stab and being bilingual, and they certainly appreciate your efforts to reciprocate. Do not be disappointed with the decor. It is pleasant but nothing special. Stay focused on that main course. You won't be disappointed!
