Chef-owner Victoriano Salvador learned his trade in France and adapts French cuisine to Spanish taste, with whimsical touches all his own. Sample the traditional carrillada de buey braseada con jengibre (cheek of beef braised in ginger) or the more Continental hojaldre de verduras y foie con salsa de trufas (puff pastry filled with leeks, foie, and julienned carrots in a truffle sauce).
