Owner Pedro Torres Pacheco, one of Spain's most famous restaurateurs, has done much to promote the excellence of Cuenca's cuisine. This pleasantly low-key spot in the lively heart of the modern town serves such local specialties as ajoarriero, a paste of pounded salt cod, garlic, and peppers served on toast, and morteruelo, a warm pâté made from the livers of wild game (such as rabbit and partridge) and served with garlic bread. For dessert, try the alajú, a Moorish sweet made with honey, bread crumbs, almonds, and orange water. To drink, try resolí, Cuenca's liqueur made from orange, coffee, and spices.
