Local upland ingredients and seafood dishes from the nearby Atlantic and Cantabrican coasts balance a constantly changing menu rich in creativity. Look for celebrations of products from Zamora and beyond such as the garbanzos de Fuentesauco al ajoarriero y setas de temporada (chickpeas from Fuentesauco cooked in garlic and wild mushrooms) or, for dessert, cañas zamoranas rellenas de haba de tonka (crust of toast stuffed with a Venezuelan licorice-cinnamon bean).
