The VIP table serves diners on Versace crockery and Baccarat crystal, and the cooking is no less exquisite. The menu changes frequently but expect up-to-the-minute tricks such as meat or fish cooked at low temperatures (45 degrees Celsius), salads with contrasting textures and temperatures, and some of the best risottos in Bilbao.
