With a wood paneled dining room decorated with antiques, this family operation is a longtime local favorite for fresh fish and meats cooked over coals, and is known for first-rate ingredients lovingly prepared. Named for the famous fishing village just west of San Sebastián long known as la cocina de Guipúzcoa (the kitchen of Guipúzcoa province), Bilbao's Guetaria does its namesake justice. The kitchen, open to the clientele, cooks lubina (sea bass), besugo

(sea bream), dorada (gilthead bream), txuletas de buey (beef chops), and chuletas de cordero (lamb chops) to perfection in a classic asador (barbecue) setting.
