Standing on its own 1,000-acre estate amid olive and holm-oak trees, this complex ($$$$) 42 km (24 mi) west of Priego de Cordoba resembles a Moorish village, or a rambling cortijo (ranch). It has white walls, tile roofs, patios, fountains, and an artificial lake. Guest buildings center around a 16th-century-style chapel that houses a 1,595-pipe organ. Each room has a balcony, a terrace, or a garden. One restaurant serves highly creative international cuisine, and the other serves more down-to-earth regional items. The hotel is just south of the La Subbética region, technically in Granada Province, but it has by far the best accommodations in the area.
