Fodor's Review:

Just outside Jerez de la Frontera is Yeguada de la Cartuja, the largest state-run stud farm in Spain, specializing in Carthusian horses. In the 15th century, a Carthusian monastery on this site started the breed for which Jerez and the rest of Spain are now famous. Every Saturday at 11 AM a full tour and show begin. Book ahead.
