Montilla
Heading south from Córdoba toward Malaga, you'll pass through hills ablaze with sunflowers in early summer before you reach the Montilla-Morilés vineyards. Every fall, 47,000 acres' worth of Pedro Ximénez grapes are crushed here to produce the region's rich Montilla wines, which are similar to sherry. Recently, Montilla has started developing a young white wine similar to Portugal's Vinho Verde.
