On the rooftop of the Museum of Scotland, this restaurant offers a feast of modern aesthetics -- tweed banquettes, suede chairs, glass walls -- before you even get to the menu. It also has one of the finest vistas in the capital. The Tower has a high-powered ambience and a sophisticated menu with an exquisite oyster and shellfish selection, Aberdeen Angus beef, roast saddle of wild red venison, and more. The two-course pretheater (5-6:30) supper is an especially good value, but don't let the lovely Edinburgh skyline distract you from making your curtain time.
