Rejecting the idea that fine dining should be a stuffy affair, owners Paul Wedgwood and Lisa Channon opened this Royal Mile gem. The dining space is smart but informal, and the professional staff has mastered the tricky task of giving guests space to relax while remaining attentive. But Wedgwood's food is the standout. The best local produce is taken in some surprising directions with Asian, French, and traditional Scottish influences apparent in dishes such as monkfish tail with shellfish paella and ham, or panfried pigeon with haggis, neeps (turnips), and tatties (potatoes). Save space for seasonal sweets like rhubarb-and-vanilla trifle infused with gin and pink pepper.
