José Avillez, one of Portugal's most renowned young chefs, has found his ideal showcase in this cozy haven in front of Lisbon's opera house. The inventive cuisine uses the latest techniques in playing on traditional themes. The à la carte list features signature Avillez dishes such as the heavenly Pombo à "Convento-de-Alcântara" (stewed pigeon); and Raia Jackson Pollock—skate presented to look just like one of the artist's paintings (a copy is provided
for comparison). The olive trilogy (crunchy, spherified and liquid) is a fun starter, while the petits fours are a divine ender.
