"John the Baker," undoubtedly the most eclectic restaurant you are likely to find in this area, was named after the owner who opened a small restaurant in Cascais 40 years ago that catered to local fishermen. The place became so famous that it attracted Portuguese royalty. In 2001, John opened this establishment in what was once an indoor swimming pool—though he did keep the outdoor pool—in an isolated part of the Guincho beach. Now, under an elaborate wooden ceiling and surrounded by modern art and a wall of photographs showing guests of the old place, you can enjoy fabulous seafood dishes including the famous Cascais Dover Sole.
