Newly opened in the regal Hotel de l'Europe, this playfully modern French restaurant is elegant without being stuffy. Of course, the ingredients are top-notch, but what really sets the cooking apart are the inventive preparations, such as the beetroot in salt crust with marinated wild salmon and horseradish ice cream or the blue lobster with a coral and grapefruit broth. Don't miss the stunning desserts, including a huge gold-flecked chocolate balloon that melts down to reveal a scoop of kaffir lime ice cream inside. To avoid breaking the bank (too much), opt for their lunch tasting menus, ranging from €38 for two courses to €58 for four courses. For a view to match the meal, ask for a table overlooking the Amstel River.
