Bolenius Review

What's "New Amsterdam cuisine," you ask? For your delicious answer, venture to this innovative restaurant (replete with Scandinavian-inspired lacquered wood and angular chairs) way out by the World Trade Center. Luckily, it's right near the Station Zuid metro stop. (Yes, Amsterdam has a metro, and it's pretty good.) Everything at Bolenius is fresh, beautifully composed, and hyper-local; in season, many of their vegetables and herbs come from their very own kitchen garden, one of the largest in Amsterdam. No cream or sugar is used in the innovative dishes like a "risotto" of cauliflower and ricotta, topped with herring eggs, or the 30-day dry-aged beef with parsnip and apple—with an exception for the amusing desserts, including a reinterpretation of old-fashioned Dutch candies. Thank Bolenius for taking the starch out of venerable Dutch cuisine—and giving us a taste of the future.
