Newly reopened on the Amstel with expanded hours and an expansive wine cellar, "From the Market" lives up to its name: each course of the day's three- (€39), four- (€46), five- (€54), or six- (€60) course feast is made from the freshest ingredients found at Amsterdam's food markets that morning. As such, the vegetarian-friendly menu might include anything from fava beans with pesto, chickpeas, and asparagus to baked scallops with a green Thai curry to grilled turbot
with artichoke mousseline. (Often, dishes exhibit an Asian touch.) The new setting is sleek, modern, and very refined.
