When you enter this classy restaurant inside the Sofitel Amsterdam hotel, you will pass a Karel Appel wall mural, before getting distracted by the outdoor garden (where you can dine, if you'd like), and a raw bar covered with oysters, sushi, lobster, and fresh fish tartare. The kitchen produces an array of global fish dishes that use few but always fresh ingredients to showcase the natural flavors of the fish, like the monkfish with fois gras and hazelnut, and the halibut with farfalle pasta, green peas, and squid ink. Guests can certainly put their faith in the wine choices coming out of their vinothèque. In short: if you love seafood, Bridges is a fine destination for a celebratory meal.
