When only the poshest and most elegant will do, take your primped-up selves here. The tinkling of a grand piano, solicitous waiters, knowledgeable sommeliers, laden dessert trolleys, and preparation carts all waltz together here in a setting of towering palms, tall candelabras, shimmering chandeliers, and stunning views over the Amstel River. The menu here is traditional French, but the inspired chef, Jean-Jacques Menanteau, also knows some twists, such as a sublime lobster bisque and a grilled turbot with shrimp and Parmesan risotto. If you're feeling adventurous, opt for his fixed-price five-course menu excelsior, for EUR 80 (add EUR 42.50 for wine), which features not only seasonal specialties (think truffles) but occasionally also the acclaimed dishes he creates from such unprepossessing meats as liver and kidneys.

Hard to beat this one for quality of food and service. The 4 course menu was memorable - but you pay memorable prices, too!
