This subcanal-level eatery with its peaceful dining room offers a savvy and stylish balancing of Mediterranean tastes. Though the menu is in continual flux, it may include shrimp sausages, octopus with a salad of couscous, basil, and black olives, or a galantine of organic chicken with shiitake mushrooms. You can also opt for one of three surprise menus (€34.50 for three courses, €44.50 for four courses, and €52.50 for the six-course tasting menu). A great wine list sells many by the glass.
