The short but smart menu tells you from where in the Netherlands many of the ingredients hail—North Holland, Limburg, Baambrugge—and, depending on the season, you may find yourself digging into an inviting salad of grilled baby romaine with Dutch shrimp, octopus, broccoli, bulgur, and mint, followed by the catch of the day with seasonal vegetables. The centerpiece of the restaurant is the open kitchen, in the sight line of nearly every table.
