A great view of the Duomo is coupled with superb food. Eggplant is transformed into an elegant custard with black truffles in the sformatino di melenzane con vellutata al tartuffo nero. Pastas, like ombrichelli al pesto umbro, are traditional, but perhaps with a new twist like fresh coriander leaves instead of the usual basil. Lamb roasted in a crust of bread is delicately seasoned with a tomato cream sauce. The wine cellar includes some rare vintages.
