In the heart of the historic center, Baghino is the best restaurant in town. It's been serving since 1870, capably run by five generations of the Pacetti family (daughters Guja and Silvia are presently in charge). Part of the building dates to the 15th century, when it was a convent; later it was the seat of the Freemasons. The food lives up to the building's colorful history. Do not miss the sedano ripieno alla pratese (stuffed celery), in which celery is pressed, stuffed with a minced veal and mortadella filling, coated in flour and egg, and fried in olive oil. A tasty ragù crowns the dish. Another house specialty is the filetto al pepe verde (beef filet in a creamy green peppercorn sauce). The wine list boasts local favorites, which are among the best in Tuscany.
