The fascinating cuisine here is based on old recipes from the various cultures—Norman and Moorish among them—that loom large in the history of the region. Extravagant recipes such as cornetti di pasta-farciti con gamberi e conditi con frutti di mare (homemade croissant pasta filled with shrimps in seafood sauce) are worth trying. You can rely on the knowledgeable maître d' for an absorbing commentary on the various dishes and advice on the right wine from a siege-ready cellar. For dessert, opt for candied eggplant filled with ricotta and topped with chocolate sauce. Above the restaurant area is a select 10-room hotel—called La Locanda del Capitano—run by the same family, with the best rooms overlooking the waterfront.
