Though Vincenzo Clemente, the Sicilian-born owner of this charming restaurant not far from Palermo's main shopping street, Via Liberta, lived in Louisiana for 20 years, you won't find a trace of the South in his innovative Italian cooking. But you will find lighter and more modern versions of traditional Sicilian dishes, from the exemplary ricotta casserole with pumpkin, mint, and zucchini to the ultrafresh bavettine pasta with artichoke, leek, speck, dried ricotta, and balsamic vinegar. Don't miss Clemente's signature dessert, a heavenly semifreddo that comes in rotating flavors like pistachio and cinnamon, chocolate and hazelnut, and Marsala wine and raisin. Private cooking classes with a market visit are also offered upon request (€150 per person).
