Run by the same family for three generations, this restaurant, one of Italy's finest, is known for its rustic elegance and superb food. The setting on the bank of the Tanaro River is splendid; the menu of regional specialties may include agnolotti ai tre stufati (with fillings of ground rabbit, veal, and pork) or the equally delicious ravioli ripieni di baccalà su passato di finocchi (filled with salt cold with fennel sauce). To finish, try the house specialty,
cialda farcita al miele tiglio e salsa ai lamponi (a waffle-like wafer filled with lime-tree honey and raspberry sauce). Fixed-price menus are available with or without the wine included. As you might expect, the wine list is first-rate.
