This tavola calda in the middle of the covered Mercato Centrale has been serving up food to Florentines who like their tripe since 1872. Tasty primi and secondi are available every day, but cognoscenti come for the panino con il lampredotto (tripe sandwich). Less adventurous sorts might want to sample the bollito (boiled beef sandwich). Ask that the bread be bagnato (briefly dipped in the tripe cooking liquid), and have both the salsa verde and salsa piccante (a spicy cayenne sauce) slathered on top. And go early, as they inevitably sell out of them.
