Fodor's Review:
It's been around since 1872, and it's easy to see why: this tiny stall in the middle of the covered Mercato Centrale has been serving up Florentine food to Florentines who like their tripe. Tasty primi and secondi are available every day, but cognoscenti come for the panino con il lampredotto (a type of tripe sandwich). Less adventurous sorts might want to sample the panino con il bollito (a boiled beef sandwich). Ask that the bread be "bagnato" (dipped, briefly, in the tripe cooking liquid), and have both the salsa verde (green sauce) and salsa piccante (a spicy, cayenne-laced sauce slathered on top.
