The medieval fortress thought to have inspired "Sleeping Beauty" is now a small luxury hotel, surrounded by a forest of oaks, a bit to the northeast of Hofgeismar. It's a popular place for weddings, and on request, a "prince" and "princess" will present a version of the Sleeping Beauty story. The restaurant ($$-$$$) serves fine venison in the autumn and fresh trout with a Riesling-based sauce in the spring. Pro: incredibly romantic. Cons: ordinary hotel rooms that are incompatible with the setting, takes some effort to find the place.
