Just southeast of Saumur, in Dampierre-sur-Loire, stop in at the Château de Chaintres, where Krishna Lester, a husky English eccentric, produces the region's finest red and enjoys expounding on the unexpected links between frogs in the throat, toads in the hole, and malolactic fermentation.
