Too many restaurants in St-Tropez are like the fading celebrities that once made them famous, so the substantial Le Suffren is a welcome departure. Located in the Hotel de Paris St-Tropez, with an unusual interior of black granite slabs and bright yellow cushions and drapes, this dinner-only bistro orchestrated by 3-star Michelin chef Georges Blanc doesn’t depend on people-watching in the port to distract you from the quality of the seasonal and market-fresh dishes. On offer are such hits as Côte d’Azur poached egg on gnocchi stuffed with crab and fennel, velvety spinach soup with shellfish and mushrooms, and the Hotel de Paris burger with dry-aged Iberian beef, cheddar cheese, and bacon.
