Philippe Troncy is one of St. Raphael's most respected chefs, and his menus change according to the season, with market-fresh produce and simple recipes made nouveau with original twists. It will be hard to chose from the varied pasta, fish and meat dishes, but the sinfully smooth fois gras or delightful bourride raphaëlois (fish stew) are always good bets. The garden terrace is a shady oasis filled with magnolia and lemon trees, perfect for digesting the dark chocolate cake with bourbon and vanilla ice cream.
