Young Luc Salsedo, who trained at the Louis XV in Monaco, has a hit on his hands with this little ocher-wall bistro. His brief dinner menu, which changes completely every 10 days, often involves modern twists on traditional Niçois dishes, such as socca (a chickpea flour pancake, which he wraps around stir-fried spring vegetables) or pain perdu aux pommes (French toast with apples and cinnamon served with salted caramel ice cream). Servings are generous—expect a big appetizer plate and mignardises in addition to the set menu's three copious courses (€45)—and the dining room staff, led by Luc's wife Christine, is stellar. Reservations are recommended, especially for a spot on the terrace.
