In the chic, retro-'60s Grand Hotel Cannes, this modern spot with sleek plate-glass windows to take in the garden and sea views is the showcase for Chef Sébastien Broda's cooking. The local-boy-made-good (he trained at La Palme d'Or and at Roger Vergé's Mougins landmark) has piqued the curiosity of both far-flung foodies and plenty of trendy Cannoises, earning himself a Michelin star along the way. He continues to put on a real show: picture dishes like flaked crab with “Black River” caviar and smoked salmon blancmange, avocado gazpacho, bread croutons with nori seaweed, sesame oil and curry. Order à la carte or opt for a set menu (€55, €80, and €120) including the five-course vegetarian menu (€60).
