Set in the chic, retro-'60s Grand Hotel Cannes, this modern spot with sleek plate-glass windows to take in the views is the showcase for chef Sébastien Broda's cooking. The 33-year-old chef of growing fame puts on a real show with some of the most Barnumesque dishes around: the pea soup with M&M–like balls of foie gras or the blue lobster with ham shoulder get loud bravos. This local-boy-made-good (he trained at La Palme d'Or and at Roger Vergé's Mougins landmark)

has piqued the curiosity of both far-flung foodies and plenty of trendy Cannoises.
