Forget five stars: this toy Mediterranean village, celebrating 50 years in 2017 and grouped around courtyards landscaped with palms, olive trees, and lavender has obtained "Palace" classification. Guest rooms, done up in à la provençale style, have ultramodern comforts; when you can tear yourself away, lounge by the piscine, then indulge in a goat cheese samosa or Byblos burger at B., the all-day poolside restaurant. Ducasse's Rivea at Byblos, open for dinner only, has nailed the exact size of portions necessary to satisfy the senses, although the price of such contentment is high (€42 just for the main course). As evening falls, all head to the hotel's Caves du Roy—a kitsch disco extravaganza where squillionaires order €35,000 bottles of Champagne. Paparazzi-free, it's virtually impossible to get in unless you arrive early or reserve a table in advance.
