Fodor's Review

Occupying the site of an ancient Knights Templar fortress and set amid acres of greenery designed by Jean Mus, this hilltop domain has 180-degree panoramic views and a noteworthy restaurant. The ecological Sisley spa was winner of the Best Luxury Destination Spa in Europe 2014, and the helicopter pad is an indication of the kind of company you'll be keeping—Brad Pitt and Angelina Jolie, among others, are former guests, so servers are used to discreet excellence. Inside are light, airy public salons (where afternoon tea and rare Champagnes are offered) and luxurious guest quarters that include two- and three-bedroom villas accented with beautiful antiques. But Le Saint-Martin, the Michelin-star restaurant, with 12,000 bottles on the wine list, is perhaps the best reason to come here: chef Jean-Luc Lefrançois's creations are superb, and the panoramic terrace views over Old Vence to the Baie des Anges are eye-popping.
