Nîmes's most fashionable post-corrida gathering spot is in the Hotel Impérator, with warm-weather dining in an idyllic garden court. The food is hearty and delicious, with surprisingly Spanish touches. Chef Thierry Plaideau carefully structures his menu, sprinkling in dishes such as almond duck, dried cod stuffed in red peppers, and roasted lamb cooked in wild mint. Have an after-dinner drink in the Bar Hemingway; after all, they named it for him because he loved to drink here.
