While Vaison has centuries-old attractions, the most popular for Americans may well now be Patricia Wells's Cooking Classes. A living monument of Provence, the celebrated food critic first made her name known through posh food columns and The Food Lover's Guide to France. First-hand, she now introduces people to the splendors of French cooking in her lovely farmhouse near Vaison through week-long cooking seminars—luxe ($3,000 a student), eight students only, and set over Madame Wells's own Chanteduc vineyards. The truffle workshop is usually sold out, so book early.
