Opened by Inaki Aizpitarte, who now runs Le Chateaubriand, this hip restaurant on a street known for its role in the film Améliehas a new avant-garde chef at the helm. Jaene Movera's cooking is strongly influenced by that of fellow Spaniard Ferran Adrià: expect dishes like vanilla-scented Jerusalem artichoke froth with jellied foie gras, and Thai ravioli with a coconut and galangal soup, most of which are made with organic ingredients. The menu is prix fixe only. The spare space attracts the bobo (bohemian bourgeois) neighbors, who are bringing a new energy to Montmartre.
