When Bruno Doucet bought the original La Régalade from bistro-wizard Yves Camdeborde, some feared the end of an era. How wrong they were. While Doucet kept some of what made the old dining room so popular (country terrines, reasonably priced wines, convivial atmosphere), he had a few tricks under his toque, creating a brilliantly successful haute-cuisine-meets-comfort-food destination with dishes like earthy morel mushrooms in a frothy cream for a starter, followed by the chef's signature succulent caramelized pork belly over tender Puy lentils. For dessert, don't skip the updated take on grand-mère's creamy rice pudding or the house Grand Marnier soufflé. With an excellent price-to-value ratio (€39 for the prix-fixe menu at lunch and dinner), this chic bistro has evolved into a Paris gastronome staple.
