Also popping up all over Paris -- there were 12 outlets at this writing, including Ile St-Louis -- and winning converts faster than you can finish a double scoop, is the Amarino chain of gelaterias. Popular flavors include dark chocolate and the creamy dolce con leche; one nouvelle specialitée is "la foccaccina" -- brioche stuffed with gelato. The shop is open every day, noon to midnight.
