Chef Alexandre Dessaux, formerly second in command under Patrick Kukurudz (who served Norman haute cuisine to the town's gourmands for almost 30 years), took over as head chef in late 2012, thus preserving the traditions of this venerable dining room. At the end of a cobbled courtyard in the city's old town, the half-timber building is a vintage charmer, and the elegant dining room is cozy and hushed. Regional flourishes—such as panfried bass with leeks and a rich squash
sauce, squab with cabbage and duck foie gras, or veal kidneys doused in Bordelaise coulis—dominate the menu. There are several excellent prix-fixe dinner menus (€42–€74), but the best bargain is the weekly lunch menu (€27), which includes a glass of wine.
