Chef Alexandre Bourdas earned his second Michelin star in 2010, after putting Honfleur on the gastronomic map with his first in 2008. From the small but ravishing dining room to the impeccable presentation, his restaurant is a study in getting it right down to the smallest detail. Surprising combinations—like sea bream with nori and marinated sanshō, or cabbage tempura with a truffle crust—attest to Bourdas's far-flung influences: including his native Midi-Pyrenees,

Japan (where he cooked for three years), and the local bounty he seeks out daily from farmers and fishermen. Having also worked as a pastry chef, Bourdas creates his own desserts, among them a delicate mousseline brioche laced with rose ice-cream and whipped cream with red wine liqueur. In addition to a pair of sublime tasting menus (€75 and €115), there's a "surprise menu" for kids (€25). Bien sûr, reserve well in advance.
