Fodor's Review:

One of Europe's latter-day culinary shrines, this elegant Third Empire mansion has become packed with critics and millionaires fighting to pay top dollar to taste the creations of the new culinary messiah, Marc Veyrat. His domain offers guest rooms with spectacular views of Lake Annecy, but most everyone will be too knocked out by the dining-room fireworks. Veyrat's miracles are wrought with local Alpine produce, most of which the self-taught shepherd handpicks himself in pastures that surround the hotel. The resulting meals are once-in-a-lifetime events. To wit: his hot-and-cold Foie Gras with Fig Purée, Bitter Chocolate, and Bitter Orange Juice; or his Crayfish and Roquefort Sabayon with Queen of the Meadow Froth; or his Roasted Langoustines with Hogweed Semolina; or his amazing desserts, such as his sublime molasses sorbet. Upstairs, super-expensive guest rooms and suites—many done in a luxe-châlet style—await those who just want to retire and digest the feast. For lots more on Veyrat's cuisine d'auteur, see "Lyon: France's Culinary Cauldron" in this chapter. Pros: alpine cuisine as healthy and original as the Alps themselves; pretty lakeside location; exquisite taste down to every detail and design. Cons: embarrassingly expensive; a long walk to the luscious corners and cobblestones of Annecy; $100 breakfasts.
