In this hole-in-the-wall bistro on Place Garibaldi, two brothers have gone back to their roots, and all of Nice has followed. Frank Musso, trained at the Tour d'Argent in Paris, concentrates his sophisticated gifts on simple dishes: tripe simmered in tomatoes, daubes and pork confits, and crepes with homemade bitter-orange marmalade. His brother Christian provides the cheery welcome.
